Mee Bandung is a delicious noodle in thick spicy gravy loaded with slices of beef, squids, prawns, vegetables and egg. If you can't take the heat, lessen the chilli powder and substitute with fresh tomatoes instead. If you like it spicy, add more chilli powder as this recipe is a bit "mild" to suit my kids.
Original recipe calls for the asian "Yellow Noodle" but I don't really like the taste of the noodle, so I substitute with spaghetti instead.
Mee Bandung Recipe:
Blend :
1 medium onion
3 cloves garlic
2 tablespoon red chilli powder
1 fresh tomatoes
3 heaped tablespoon dried prawns
Meat (as desired)
Sliced Beef
Squids
Prawns
Vegetables (as desired) suggested ones are:
baby corn
Mustard Green (sawi)
Balance Ingredients :
1/2 small tapioca - diced
4 tablespoon tomato sauce
4 tablespoon chilli sauce
2 tablespoon oyster sauce
Sugar and salt to taste
Sugar and salt to taste
1 teaspoon flour - mixed with water
1 egg for each person
Garnishing:
Finely chopped spring onion and chinese celery and crispy fried shallots.
Cooking Instructions:
Boil the tapioca and beef until tender in a pot while you prepare the other ingredients.
Add a bit of oil and stir fry the blended ingredients for about 2-3 minutes, add in the squids and prawns and vegetables, add in the beef and tapioca stock, and tomato sauce, chilli sauce and oyster sauce, sugar and salt and simmer until desired consistency.
Lastly, add in the flour and water mixture bit by bit until the gravy thickens to your liking (don't add too much as you don't want the gravy to have a flour taste) then add in the egg, garnish and serve.
