Instructions:
125g butter
125g plain chocolate
3 large eggs
300g soft brown sugar
2tsp vanilla extract
150g self raising flour
25g cocoa powder
125g walnuts, toasted and roughly chopped
Instructions:
Preheat oven to 180C. Lightly grease and line a rough 6 1/4 inch x 10 1/2 inch baking tin with parchment.
Put butter and chocolate over bain marie, stir and leave to cool for 10 mins.
In a separate large bowl, whisk the eggs, sugar and vanilla together until thick and moussey (about 3-5 mins)
Sift flour and cocoa powder over mousse mixture, then carefully pour the cooled chocolate mixturearound the edges. Add the nuts. Use a large metal spoon to fold everything together.
Pour mixture into tin and bake for 25-30 mins. Leave to cool completely in tin, then cut in squares and dust with cocoa powder before serving.
