Chicken, Broccoli and Lemon stir fry

1 tsp sunflower oil
15g butter
1 inch ginger
1 garlic clove
250g chicken breast
200 g broccoli florets
1tbsp light soya sauce
zest and juice of 1/2 lemon
1tbsp of flaked almonds, toasted

Instructions:

Heat oil and water in a pan and stir fry ginger and garlic, add in chicken and toss everything together. Add 2tsp water, cover pan and cook 5-8 mins to steam chicken.

Add broccoli, soy sauce, lemon zest and juice. Cover and cook until broccoli is tender. Sprinkle over almonds and serve with rice.
